How to Check Doneness with an Instant-Read Thermometer

Probe the thickest point, keep the tip off bone, wait for the digits to settle — that is the whole skill.

An instant-read thermometer answers the only doneness question that matters: what is the temperature at the centre of the food right now. Insert it near the end of cooking, not at the beginning, and treat the reading — not the timer — as the decision.

Placement decides accuracy. Aim for the geometric centre of the thickest section, entering from the side on thin cuts like burgers and chicken breasts so the tip does not punch through to the pan. Keep clear of bone, gristle and large fat pockets, all of which read differently from the meat around them.

Wait for the reading to stop climbing before you judge it; a number caught mid-rise is a number still on its way to the truth. On whole birds, check both the breast and the inner thigh; on roasts, probe two spots a few centimetres apart.

Plan for carry-over. A roast's internal temperature rises another 3-5 °C during a 5-10 minute rest, so large cuts can leave the oven slightly below target as long as they still hold the safe minimum — 63 °C for whole beef, pork and lamb — for the required 3 minutes.

The typical failures all have names: the bone-touch (reading high against bone), the surface skim (probing only near the outside), the early pull (reading before the digits settle) and the colour guess (judging by juice or tint instead of temperature).   • Insert from the side on thin cuts, from the top on thick roasts
  • Tip in the centre, away from bone and fat
  • Wait for a steady reading, then check a second spot on large items
  • Rest whole cuts 3 minutes minimum, roasts 5-10 minutes
